I just got back my driver 66 E-Type FHC from restoration and the dash lighting is very very dim -- it appears non-existent on the lower of the toggle switch settings and far less than I recall from ownership of a previous E many years ago on the top setting. The restoration shop says this is normal,that you are lucky to see the output "on the night of a global eclipse," but I would like to increase the brightness -- I can barely see the speedometer. Is there anything I should do to check or do to increase the brightness?

Assuming all bulbs are good and dirt is not an issue it sounds like the switch had built too much resistance from age--try by passing the switch and see how it is--you can put in brighter bulbs but heat from them might cause some damage. Also I would check the wiring to the switch--perhaps they (restorer) wired the switch improperly.
