Recently I had to replace the pistons on my 1965 E type and they used cro molly rings and I have been burnimng a lot of oil. A quart every 1-2 tanks of gas. The rebuilder said it will take 5-7,000 miles for them to break in and seal properly. Is this true?

You might enjoy reading an article in "Engine Builder" about rings. Google search "using chrome rings in an engine". Then select the first item "Piston rings and surface finish".
You then may be able to ask your engine man some interesting questions.

You didn't say you had bored the block.
35+ years in the biz (almost 40, if you push it), and I can tell you this:
Never, as in ever, use chrome rings in an old bore.
It has to be perfect for them to seat.
