Is there any reason why one would not replace steel engine/manifold nuts (grade 2) with stainless steel (Type 316)?...aside from cost, of course! :-)

it sounds like a great idea to me. I would also replace the studs they attach to with stainless, and use a good anti seize compound on both ends of the stud. you have to have dissimilar metals in contact somewhere when you do this.
