I'm thinking I know the answer to this question - but - is there any way to tell if the timing tensioners have been replaced in a '99 XK8 without reference to it's printed service history?

Without any documentation to prove that work has been done, the only option is to remove one or both cam covers and inspect the chains and tensioners. That will cost you some seals and gaskets, of course, but you would have your answer.
