I need to replace the A/C evaporator unit. Does anyone have any advice and how much time is involved?

Nope, when that was a regular repair, and I knew every tool, socket, driver, plier and puller I was gonna need right off the top of my head, and I knew where I was going to lay every part, piece and screw. If I was not interrupted, I could start at 7:45a and be sittin' in the seat cooling off at 3:30p, in time to get the car all cleaned up for delivery to the owner by 5:00p.
The 'not interrupted' was the tough part.
I couldn't do that today if my life depended on it! Thanks for allowing me to reminisce. :-)
Cheers,

A bunch! Especially if you've never done it before. When I was in my prime and doing that regularly, it took me an entire day to complete, being thorough and careful. Doing it faster than that leads to shortcuts, damage and leaving fasteners out etc.
If you want to tackle it yourself, allow three or four days working time and more for tracking down parts that become necessary along the way.
Sometime back there was a post with a fellow questioning the labor charge he was quoted to replace his evaporator. You might search that out for a little reference.
Good luck!
Why do you think you have to replace it?
